The Green Initiative of

La Roulotte à Patates de Gentilly

Since 2014, Julie Desbiens, owner of La Roulotte à Patates, has been leading an inspiring eco-friendly shift in Gentilly. Her goal? To turn her restaurant into a sustainable snack bar through concrete actions that raise awareness among customers, employees, and local businesses—and to inspire other citizens and entrepreneurs to take action as well.

Eco-Friendly Actions

On-site

Responsible sourcing : Achat local, priorité donnée aux produits réutilisables, recyclables ou recyclés, biodégradables, compostables, écologiques, biologiques, à faible impact environnemental.

Quality employment : A respectful work environment that considers health, workplace safety, and working conditions.

Source reduction : We minimize residual materials (waste, recyclables, or organics) at the end of use through source reduction:

  • High-quality recyclable or reusable containers and utensils

  • No more disposable water bottles and straws

  • Offering mini portions to reduce food waste
  • No more paper menus, now available online
  • Reuse: priority given to repair rather than end-of-life disposal and replacement.

Waste sorting : Addition of a sorting station, rinsing area, and drinking water (recycling, reusable, deposit, waste)

to go

Recyclable and reusable containers: : Recyclable or dishwasher-safe containers.

○ Deposit system: A $0.50 deposit on reusable containers to encourage customers to return and reuse the dishes.

Carbon offset : Reduction of GHG emissions by prioritizing bike delivery within the village area.

To raise awareness

○ Train customers and employees on eco-responsibility : Eco-friendly informational posters, word of mouth.

○ Promoting our approach : Sharing our initiative on social media, our website, and other media to inspire other entrepreneurs.

Community involvement : Our company’s participation in community activities (donations to causes, events, etc.).
